Ingredients
Cheddar Oat Cakes
- 1 cup oat flour
- 1 cup rolled oats
- 2 tablespoons coconut oil
- ½ teaspoon salt
- ¼ teaspoon ground cumin
- 1 cup grated cheddar cheese
- ¼ cup water
Sautéed Apples
- 2 Fuji apples, peeled, cored, and thinly sliced (about 2 cups)
- 1 teaspoon coconut oil
Directions
Pre-heat oven to 350°.
In a medium size mixing bowl, place ingredients in order as listed except the water, and stir to incorporate.
Add water and press together to combine so ingredients hold together. Using a rolling pin, roll out mixture to a ¼” thickness.
Using a 2” round cookie cutter, cut out cakes and place on a parchment-lined baking sheet. The mixture can be gathered and rolled out again until all of it is used. Bake for 20-25 minutes or until golden.
While the cakes are baking, place a 10” sauté pan over medium heat and add coconut oil. Add the apples and sauté until slightly soft, about 5-7 minutes.
