Asian-Chicken-Salad-Plated

This recipe is an easy weekday staple. It is high in protein, low in carbohydrates, and bursting with flavor from the tender chicken and zesty dressing. The lime juice and sauces bring out the natural sweetness of the veggies and help conquer sweet cravings. The best part? It only takes 20 minutes to whip together.

Ingredients

Asian Chicken Salad
  • 1 roasted chicken, shredded
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snow peas, sliced
  • 3 scallions, sliced
Dressing
  • 1 garlic clove, minced
  • 1 tablespoon rice vinegar
  • 3 teaspoons crushed chili flakes
  • 3 teaspoons Sriracha sauce
  • 1/3 cup fresh lime juice
  • 1/3 cup tamari sauce
  • 4 tablespoons sesame oil

Directions

  1. In a large bowl, combine and toss salad ingredients except for scallions.

  2. In a small bowl, whisk together dressing ingredients. Taste and add some salt, if you like.

  3. Pour about two-thirds of dressing on salad, or dress to taste. Top with scallions. Enjoy!
