Ingredients

  • 1 cup pecans
  • 1 cup dates, pitted
  • 5 tablespoons cacao powder
  • 4 tablespoons shredded unsweetened coconut
  • 2 tablespoons honey or agave
  • 1/4 teaspoon salt
  • 10 servings vegan caramel
Vegan Caramel
  • 1/2 cup coconut oil
  • 1/3 cup almond butter
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions

  1. Add all ingredients for caramel to food processor and blend for 2 to 3 minutes until it reaches a thick, sticky, and creamy consistency. Spoon into a bowl and refrigerate until ready to use.

  2. After cleaning food processor, add pecans and pulse until the nuts reach a dry, mealy, flour-like consistency.

  3. Add half of dates to food processor and pulse. Add shredded coconut and a few more dates, mixing and adding dates until mixture reaches a sticky consistency that molds together when pressed. If mixture does not stick after all dates have been mixed in, add agave or honey and blend until sticky.

  4. Add cacao powder and pulse until evenly distributed and mixture reaches a dark brown color.

  5. Gently pack mixture into a lightly greased bread pan. Spoon caramel over mixture and spread evenly, then top with toasted coconut.
