Green goddess salad dressing, named for its green color,  is typically made with mayonnaise. By substituting avocados for mayonnaise, the result is a healthy and creaming dressing that is perfect on salads and fish, or even as a dip for crudité.  Adding water ¼ cup at a time helps to loosen up the dressing until the desired consistency is reached without adding any additional fat or flavor.   • 2 avocados
  • 1/4 cup white wine vinegar
  • 1 lemon, juiced
  • 2 garlic cloves
  • 1 1/2 cups fresh cilantro
  • salt and pepper

Directions

  1. Add avocado, white wine vinegar, lemon juice, garlic, cilantro and salt and pepper to a blender. Add ¼ cup water and blend until smooth, adding more water ¼ cup at a time until desired consistency is reached.

  2. Store in refrigerator for up to five days.
