Ingredients
- 1 1/2 cups whole-wheat white flour
- 2 teaspoons baking powder
- 1/2 cup almond meal
- 1/2 cup sugar
- 4 large eggs
- 1/3 cup olive oil
- 2 oranges, juiced
- 1 tablespoon cinnamon
- 1/2 cup honey
- 2 sticks cinnamon
- 1/4 cup water
Directions
In a mixer beat eggs until fluffy.
In a separate bowl mix all dry ingredients. Slowly add sugar to mixer and continue to beat for about 5 minutes.
Meanwhile put honey, water and cinnamon sticks in a small pot on low heat until honey has melted. Turn mixer to low and add orange juice and olive oil. Turn mixer off and slowly fold dry ingredients in with a spatula.
Spray a 9-inch springform pan with non-stick spray and add the cake mix. Bake in oven set at350ºF for about 45 minutes.
Take out of oven and while still hot soak with honey liquid, discard cinnamon sticks.
