Let me start off by warning you that this is not your average blondie. Not only is it vegan and gluten-free, its main ingredient is a protein bar. Squarebar Organic Protein Bars are my latest protein bar obsession—I can’t get enough of them! When they released a new chocolate peanut butter flavor (complete with 13 grams of plant protein), I was so excited to experiment with it in my kitchen. What I came up with were these amazing vegan and gluten-free peanut butter chocolate chunk blondies.

You don’t have to be vegan to appreciate the heavenly texture and taste of these special blondies. They are so smooth, moist, peanut butter-y and packed with random (and welcome!) hints of chocolate, you’ll wish you had doubled the recipe to have more. They taste even better after some time in the fridge, making them the perfect summer snack. Give these peanut butter chocolate chunk blondies a go and let me know what you think! I couldn’t keep my hands off them and definitely didn’t want to share.

Ingredients

  • 1 1/2 cups oats, rolled, old fashioned, dry
  • 1/4 cup almond flour, finely ground
  • 1 tablespoon flax seeds, ground
  • 1/4 cup sweetener, stevia, powder (cup)
  • 2 teaspoons baking powder, double acting
  • 3/4 cup almond milk, original, Almond Breeze, unsweetened
  • 1/4 cup applesauce, canned, unsweetened
  • 1/2 cup peanut butter, chunky
  • 1 Chocolate Peanut Butter (Squarebar)

Directions

  1. Grind the oats into a flour. Then in a medium bowl, mix the ground oats and the remaining ingredients (except for the Squarebar); mix very well until even.

  2. Chop up the square bar into small pieces, and fold into the batter.

  3. Spray a 9×9-inch baking dish with nonstick spray and pour your batter in.

  4. Bake at 350°F for 22-25 mins.

  5. Let cool 10 minutes then cut into 12 pieces. Enjoy!
