Fresh fruit is nature’s homegrown sweet dish, and nothing makes a better summertime dessert.

The only thing that beats perfectly ripe fruit is perfectly ripe fruit that has been grilled. By grilling the fruit, the sugars begin to caramelize and the flavor intensifies.

This recipe is for grilled peaches, but feel free to swap in nectarines or even pineapple slices. Whichever fruit you decide to use, make sure you brush the fruit with canola oil before grilling so it doesn’t stick to the grilltop.

Ingredients

Grilled Peaches
  • 4 peaches, cut in half and pits removed
  • canola oil for brushing
Mascarpone Whipped Cream
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar

Directions

  1. Heat a stovetop grill pan or outdoor grill to medium high.

  2. While the grill is heating, brush the cut side of the peaches with canola oil. Place peaches on the grill pan cut side down and grill for about 6 to 8 minutes or until peaches are caramelized.

  3. While the peaches are grilling add the mascarpone cheese, cream, sugar and pinch of salt to the bowl of a stand mixer. Using a whisk attachment, whisk mixture until thick and creamy, about 1 to 2 minutes.

  4. Top grilled peaches with a dollop of mascarpone cream and serve immediately.
